Azores Bean
Recipe
One of the finest bean recipes from the Azores
2 cups pinto beans
4 cups water
1/4 pound salt pork
1 onion minced
1 glove garlic
hot pepper to taste
1 and 1/2 cups tomato sauce
1 teaspoon cumin
1/4 teaspoon cinnamon
1 bay leaf
salt and pepper to taste
Wash beans and soak overnight.
In skillet fry pork and saute onions.
Aydd beans to kettle and cover with water
bring to a boil and add all other ingredients
cover and simmer for two to four hours
over low heat!!
remove bay leaf and serve it's a delicious recipe.
