Delmonico Potatoes Recipe

Delmonico Potatoes

4 potatoes part - boiled (sliced)
3 hard boiled eggs ( sliced)
2 tbs. butter or marg.
2 tbs. flour
1/8 tsp. pepper
1/4 tsp. salt
1 cup milk
3 slices of American cheese

Heat butter in a quart sauce pan over low heat until melted. Stir in flour, salt & pepper. Cook over low heat, stirring constantly, until mixture is smooth & bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil & stir 1 minute. Layer the part boil potatoes, & place them in a buttered pan Add the sliced eggs over the potatoes, then pour the sauce over them. Add the cheese on top.
Use a 8x8 pan Bake at 350% for about 25-30 min. Then serve.
