Chourico Meal
4- links of chourico or 2
lbs. cut into thin slices
2-large chicken breasts,
split, boned, and skinned.
3-large cloves of garlic, use
garlic press( Emeril should be
happy)
2-4 oz. cans of pimentos
1-large onion, chopped
4-tsp. of parsley, snipped
1- cup of rice, uncooked
3- cups of chicken broth
2- cups of water
1- tsp. of Italian seasoning
1-tbsp. of olive oil or more
for sautéing
Salt and pepper to taste.
Sauté chourico, garlic and
onion in olive oil till onion is
limp. Place chicken breasts in
bottom of a large casserole
dish. Mix all remaining
ingredients and add to
casserole. Bake in 350 oven for
one and a half hours, stirring
twice. Add more broth if mixture
becomes too dry.
